Vinification: fermentation on the skins for 20 days at a temperature of 30 degrees Celsius. Malolactic fermentation in wood in carats.

AGING: in French oak barrels of 500 liters for 9 months, then in bottles for another 9 months.

PAIRING: This is a wine that goes well with meat lasagne, tagliatelle bolognese, pasta with beans and bottom rind, meat ravioli in red sauce, and grilled meat.

TASTE: Intense ruby red. The nose is elegant and persistent with ripe red fruits and spice, notes of plum jam, cherries, herbs and tobacco, with a vanilla finish. The taste is dry, warm, quite fresh and tannic. It is an elegant wine with soft tannins and a pleasant acidity. There is great balance between the taste, nose and mouth sensations with good persistence. The tertiary aromas from the wood are balanced by the fruit of the wine but are not by any means overpowering.
