Merlot has found a new home in the soft rolling hills of the central Tuscany. Villa Pillo's clay soils bring out the round, smooth body typical of the very best Merlot. Merlot at Villa Pillo is grown in three principle vineyard sites. Sant' Adele, Meliana and San Michele with a selection of the best wine being bottled under the Sant' Adele label. Vertical trellising with foliage catchwires supporting the annual vine growth ensures the maximum exposure of the grapes to both sun and air movement. These elements help the development of both healthy and flavorful grapes. Manual operations of removing surplus shoots and leaves and careful selection at the moment of harvest further enhance quality. Tuscany's hot summers in August ensure that Merlot is our first variety to be harvested in early September. Picked at the peak of ripeness to accentuate its fruitiness, this wine was then aged in small oak barrels to enhance its balance. This Merlot's flavors of ripe dark fruits such as plum, blueberry and cherry are further broadened by aging in small barrels for 12-15 months in the Villa Pillo Cellar.
We recommend this wine with all roasts or grilled foods and any flavorful pasta like one with tomatoes or eggplant.

In the rolling hills of central Tuscany, Syrah produces wines combining body and elegance with a distinct hint of black pepper and other spices in the flavor. The Villa Pillo Syrah is grown in their three vineyard sites of Palazzaccio, Sanguigno and Peretola which lie to the east of the "Via Volterrana" the historical trade route which passes through the Pillo Estate. The vines are trained on a vertical trellis to allow management of growing shoots and favor the development of color and flavor in the grapes. Spur pruning in the Winter followed by further selection of fruit producing shoots in the Spring ensures an optimum control of yield and quality. They harvest this grape at the peak of ripeness to enhance these classic traits. It is then aged in small oak barrels. This Syrah from Pillo expresses itself as a wine with a deep dark color, aromas which combine notes of leather, blackberry, chocolate and white pepper. Flavors are firm and broad but have a degree of suppleness which gives the wine an easy drinkability even when young. We recommend this wine with grilled meats, roasts and flavorful pasta dishes.

This wine is made in the "Super - Tuscan" style by adding Cabernet Sauvignon and Merlot grapes to the classical grape of Tuscany, Sangiovese. Each year Villo Pillo adds selected wines to the blend to bring subtle complexity and richness without losing the flavor of the traditional wines of Tuscany.
