Maixei wines combine the essence of dry stone walling, a traditional technique used in Liguria, with a modern flavor, imbued with memories of the past.
The term maixei is used in local dialect to refer to dry stone walls which support the strips of land used for the cultivation of vineyards, olive groves, flowers and vegetables. The grapes are harvested by hand, and fermentation takes place in controlled temperature stainless steel vats using selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the wine. After a brief period of ageing in steel vats, the wine is bottled in the spring following the vintage.

Dry white wine. Medium straw yellow with light green tinges. An expressive nose with distinct citrus notes of grapefruit and lemon. With aging, the wine may develop more pronounced floral notes, acquiring sweetness and an almost vanilla-like aroma. It is an elegant dry wine with a fresh, clean palate and good balance. Pairs well with fish dishes which exalt the freshness and the quality of the ingredients.
