This fantastic wine is made in the
classic method from 100% Aglianico grapes from the Alto Salento
countryside
of
puglia.
The
grapes are hand harvested in boxes and processed intact directly in the press.
After a short cold maceration on the skins for 6 hours soft pressing is carried
out, followed by 25 days of fermentation then vinified using the "metodo classico"
to obtain the base wine which is then bottle fermented for 2 months. The wine
then spends 46 months on the lees before disgorgement, then It get release in
2015. In the glass it is a soft pink with hints
of copper color,
The
nose is layered with aromas of spiced plum, cherry, brioche and red flowers. On
the palate the bubbles are soft and creamy with persistent perlage,
bright flavors of cherry and plum, followed by a long refreshing crispy finish. Ideal
paring, great with
Seafood and Shellfish, also perfect as a aperitif.
