Cantina del Bovale's signature wine is Arcuentu which is made with 100% Bovale grapes. After picking the grapes in crates, the stalks are removed
and the grapes are loaded in the Ganimede wine-making tank for about 8
days at a temperature of 28 degrees, utilizing the energy produced by
fermentation for the process of lifting and soft mixing of the pomace on
the must, therefore facilitating the extraction of aromas and coloring
substances without the assistance of mechanical pumps. The nose smells of pink pepper and juniper berries, which is a good indication of a great wine. Arcuentu is a deep ruby red in color with taste of spices, violet, red plums, raspberries with a good intense tannin aftertaste. It has a soft, medium body with a lasting finish. This wine can be paired with more elaborate meals, lamb, game, roasted meats, and semi-matured cheeses.
