The most credible explanation of the term schioppettino is ripe grapes when chewed, which “crackles” due to the thick and taut skin. it also called Ribolla Nera.
Traditionally the Schioppettino was drunk young appreciating its marked acidity, the unobtrusive tannic component, and full body. but many producers have shown that the vine is capable of elegantly evolving with moderate aging, releasing its most significant trait, which is a beautiful fruitiness accompanied by an intriguing and very elegant spicy vein, particularly reminiscent of black pepper. A characteristic that associates in some way with some expressions of syrah.
The 2016 Riserva vintage saw the production of just over 15,000 bottles. After vinification, it is aged for 3 years, of which 24 to 28 months in barrels and the rest in bottles.
