The Monsupello Metodo Classico Rose is made with 95% Pinot Noir and 5% Chardonnay grapes grown on calcareous and clay rich soils in vineyards planted on the gentle slopes of the Municipality of Torricella Verzate, in the Province of Pavia, in the Oltrepo Pavese DOC of the Northern Italian Region of Lombardia. The grapes are harvested manually then fermented at controlled temperatures in stainless steel tanks long enough to obtain the base wine which is then vinified using the Metodo Classico Method (Methode Champenoise) the wine is then left on the lees for a period of about 30-36 months before disgorgement. In the glass the wine is a light salmon pink color. The nose is lovely with aromas of fresh raspberries, roses and hints of brioche. On the palate the wine is lush with soft, creamy and persistent bubbles, flavors of fresh apples, wild berries, pomegranate, brisk mouthwatering acidity and a lingering finish. This wine will pair well with Assorted Salumi, Assorted Cheeses, Risotto, , Seafood and Fish.
