This elegant and enjoyable Amarone di Valpolicella
is a blend of 40% Corvina, 25% Corvinone, 30% Rondinella, and the remainder of Oseleta, Molinara, and Croatina, grown on tuffaceous and calcareous soil on Cru Monte La Parte.
A rigorous selection identifies the best bunches, which are stored in the "fruttaio" (drying room). The drying process, all-natural without the use of an air conditioning system, lasts longer than 3 months with a weight loss of up to 35%. After a cold maceration of 15 days, the slow fermentation lasting at least a month takes place in stainless steel tanks with controlled temperatures under 20°C. The soft re-montage and delestage technique allow the maximum extraction of polyphenolic compounds. Afterward, the wine is refined in French oak barrels for at least 5 years and transferred to stainless steel tanks for an extra few months. It spends an extra year in a bottle before being released. The color is ruby red with shades of orange. while the nose reveals notes of ripe fruit such as black cherry, raspberry, dried fig, chocolate, and plum, with hints of mint and eucalyptus. Full-bodied and well-structured, the palate has fruity notes of red berries combined with licorice and tobacco. These concentrated flavors and ripe are balanced with medium and elegant tannins. Dense and complex. Rich and intense, this philosophical wine is perfect to be savored with red meat, game, glazed duck, salami, or matured or semi-matured cheeses.
