Made of 50% Cabernet Sauvignon and 50% Merlot, this wine has a deep ruby and granite red color. After hand-harvesting, the grapes are macerated for three weeks with a temperature controlled under 30 °C. It is aged for 18 months in barrels made from fine grained, low toasted, French oak, and for 12 months in the bottles. The bouquet is full of delicate herbaceous and spicy notes as well as blackberry leaves, nutmeg, bittersweet chocolate, and incense. The palate is immediately overwhelmed by the silky texture and the
ripeness of the tannins. The finish is elegant, yet complex and warm, with flavors of violets, spice, and intense cherry overtones, ending with mature aromas of chocolate and tobacco. Pair it with any juicy red meat, particularly local meat such a Florentine T-bone steak, game and venison., or even on his own, or with any meaty main dish! James Suckling 93Point
