Made of 50% Cabernet Sauvignon and 50% Merlot, this wine has a deep ruby red color. After hand-harvesting, the grapes are then macerated for no less than three weeks with a temperature-controlled to under 30 °C. It is then aged for 18 months in barrels made from fine-grained, low-toasted French oak, and after for 12 months in bottles. The bountiful bouquet is full of delicate herbaceous and spicy notes as well as blackberry, nutmeg, dark chocolate, and incense. The palate is immediately overwhelmed by the silky texture and the ripe tannins. The finish is elegantly complex, with flavors of violets, spice, and cherry overtones, ending with aromas of chocolate and tobacco. Pair it with any juicy red meat, particularly local meat such as steak, game, and venison, or even on its own.
