The selected French Burgundy clones are cultivated at
an altitude of 500 - 600 m in the monastery vineyards
in Appiano Monte on an east-facing slope opening
south with excellent chalk gravel soils.
The charmer Pinot Noir is a challenge for any winemaker, their's rises to the challenge with passion. The result is a wine offering a convincing combination of smoothness, elegance, and density. Following temperature-controlled fermentation in
stainless steel tanks at 27°C for 12 days and malolactic
fermentation in barriques, the wine is aged in
barriques for 12 months before it is bottled.

This great wine has a strong ruby red color with a taste of ripe fruits, cherry, plum, jam, spice, walnut, and integrated wood aromas. The elegant structure, soft and warm tannins present themselves as delicate, with minerals to balance.
