Monsupell Metodo Classico Brut is made with 90% Pinot Noir and 10% Chardonnay grown on calcareous and clay-rich soils of the gentle slopes of the municipality of Torricella Verzate, in the Oltrepo Pavese DOC. The grapes are harvested manually, then fermented at controlled temperatures in stainless steel tanks long enough to obtain the base wine. Afterwards, the wine is vinified using MetodoClassico( MethodeChampenoise), and then left on the lees for a period of about 30-36 months before disgorgement. Color: Straw yellow with greenish reflections, with a fine and persistent perlage. Aroma: Fine and elegant, with pleasant hints of bread crust and cassis. Taste: Dry, with a pleasant aromatic persistence and a good softness On the palate, the wine is intricate and extremely well-balanced, with persistently soft bubbles, flavors of toasted almonds, hints of mineral tones, racy acidity, and a lingering crispy finish. This Classic Method Sparkling Brut is proof of great work of the Boiatti family. Today the Monsupello winery, led by the sons of Carlo and his wife, is a heritage to be preserved.
