In order to be considered in the Carema DOC, the wines must be made from at least 85% Nebbiolo grapes. This wine is made from 100% Nebbiolo and is aged for two years in the barrel and one year in the bottle before it is released. It is a medium bodied dry red wine with good acidity. It produces beautiful Nebbiolo characteristics, with aromas of rose, dark berries, and coffee. This wine will have further refinement as it ages (10 years or more). This is a beautifully elegant wine that can be paired with almost anything. Salumi and strong cheeses, starters and first courses, red and roasted meats, game, lamb, and pasta or risotto.

As a riserva, this wine must be aged for four years before it is released. At lease 30 months are spent in the barrel and at lease one year of bottle aging. This riserva is a bold wine with a strong structure. It is medium-bodied, soft and perfumed, with fruity and spicy notes, chestnut, cocoa, and coffee aromas. Pair this wine with red and roasted meats and aged cheese. Further refinement takes place as it ages (over 10 years).
