The grapes are crushed then fermentation is done in stainless steel tanks at controlled temperature at 28°C. Maceration
of 3-4 weeks with pumping over and delestage. This Montefalco Rosso Riserva Doc 2012 features an accurate selection of the excellent 65% Sangiovese grapes
together with 15% Sagrantino and 20% Merlot. Ageing in oak barrels for 30
months, before bottling and in bottle for at least 12 months. This is a structured and persistent wine. The bouquet presents
notes of ripe dark cherries, lightly toasted oak, spices and hints of coffee. On the palate an extremely well balanced wine offers up flavors of dark fruit, spices, silky tannins, brisk acidity and good minerality. Pairing with mature hard cheeses,
grilled meats and well structured main courses.
