In the Venetian hinterland just north west of Venice, at the heart of
the classic DOC Prosecco land, is our ColSaliz wine farm. The hill's
name apparently comes from its characteristic sandy soil, called "saliz"
in the local dialect, conferring special features to the area's
Prosecco grapes. The wine farm, owned by Antonio Faganello, is well
equipped with modem facilities but relies on old traditional wine making
techniques handed over from father to son since way back in 1889. Its
laud includes 15 hectares vineyards in Refrontolo, with a favourable
west and south-west exposure, at 200-300 m. altitude. The "silvuz" and
"cappuccina" cultivation methods, together with a suitable vine density
and drastic cut in fertilizers, ensure an excellent quality for the
Prosecco grapes, thanks also to a substantially reduced yield. All our
wines are obtained from the farm's own Prosecco grapes in up to date
vinification facilities: soft grapes pressing and must fermentation in
temperature-controlled vessels are followed by the autoclave "presa di
spuma" step tu get optimum perlage. ColSaliz's Prosecco comes in two
versions: sparkling and spumante, the latter featuring Cartizze
Superiore, Extra Dry and VSAQ spumante.
