Sandro Fay's Ca Morei Valtellina Superiore is 100% Nebbiolo (Chiavennasca in Valtellina dialect). This single-vineyard red is grown at a higher elevation compared to Costa Bassa, the basic wine from Sandro Fay. This different exposure gives the wine more body and darker fruit. This wine is a perfect example of how Sandro Fay is committed to promoting single vineyards, which produce wines with distinctive characteristics due to their different soils and altitudes. They practice organic viticulture, and this Nebbiolo goes through fermentation in stainless steel tanks for 2 weeks with maceration for 6 days.
Afterward, it goes through malolactic fermentation and then aging for 12 months in barriques. Its aromas bring to mind classic Nebbiolo notes: deep, dark cherry, roses, licorice, and a faint trace of cinnamon bark. This phenomenal wine has a persistent yet soft tannin structure.

first tried this wine at the pizzeria Terun in Palo Alto and I fell in love with it: that’s why after three days I went to Enoteca Vinonostro to buy more bottles of it for my cellar.
Fabulous Nebbiolo, more elegant and less tannic than the ones I am used to.
