This fabulous blend is made the Burgundy style. The blend of 95% Sauvignon Blanc and 5% Incrocio Manzoni comes from a south-facing vineyard in the village of Teglio in Valtellina, close to the border with Switzerland.
This vineyard has a sandy and silty soil and was re-planted in 1997 near a secular forest. After hand harvesting, the wine is fermented in stainless steel tanks with cold maceration at a controlled temperature for 24 hours.
then aging in a stainless steel barrel for 3 months, then after another 2 months in brand new french barrels, before bottling. The combination of clod weather and french oak barrel gives it a straightforward flavor. like dill, nutmeg, and coconut notes, along with a customary vanilla and butter combination.
Pair it with mushroom pasta, oyster, shellfish, and white fish like trout, cod, or halibut.
